This savory salad is one of many possible delicious, child-friendly ways to enjoy your lentil (or mung bean) sprouts pnce you've grown them. My little niece and nephew love this dish!
3 cups sprouted lentils (brown or green)
2 tbsp of lemon juice
2 tbsp raw honey
2 tbsp extra virgin olive oil (optional)
1/2 tsp sea salt (more or less to taste)
1.5 tsp cumin powder (or more to taste)
3 tbsp dried parsley flakes
In a medium bowl, mix the lemon juice and honey until the honey is completely dissolved. Stir in the olive oil if using, sea salt, cumin, and parsley. Add the sprouts and stir until they are well coated with the dressing. Enjoy!
*TIP:* This salad tastes much better when you eat it the same day you make it. If you know before hand that you will not be able to use the whole amount in one day, just keep keep the dressing in a separate bottle. Then pour it onto your sprouts as you are ready to use them. The oil was part of the original recipe. Since then, I've stopped using free oils. Sometimes I add mashed avocado to the portion I'm eating for added flavor. Yum!
